Please join us at the Cow Barn for a dive into the world of game and wild food cookery.
Explore the great British outdoors and the wonderful, exciting and sustainable food we have growing, living and swimming on our doorsteps.
Your day will start with a warming drink and snack inspired by the season before its all hands on deck for the first session on how to butcher venison, starting with a whole fallow deer we will learn the best way to get the most out of every cut and the specific techniques to make butchering the whole animal less daunting! We will also explore basic game bird preparation before breaking for a light lunch.
Following this rather full on morning you will then learn all the best ways of cooking these wonderful ingredients to showcase the very best of what nature has to offer.
The course will go through different methods of cookery, how, when and why to prepare certain game meats in different ways and how to get the very most out of every animal that we are lucky enough to be able to access.
This will include Sous Vide, curing, smoking, roasting and more. There is a whole world of opportunity to grasp when cooking with game and this course will give you the confidence and knowledge to take you to the next level.
Your day will end with your very own recipe book to take away alongside some treats you have prepared during the day to take home and enjoy.
There will be plenty of time for questions and answers during the day.
